Frozen Buttercream icing is a great way to put cartoon like pictures on your cake. When making a transfer, you will need to use a special icing recipe. The reason for this is that the icing must be able to freeze in order to place it on the cake. Below you will find the recipe I use and I will post directions on making a transfer later this week.
Ingredients:

1 cup Crisco

3 sticks butter

2 Tsp flavoring

2 pounds powdered sugar


Directions:


1. Cream the butter and shortening well.



2. Add the flavoring.



3. Slowly add the powdered sugar.



4. Mix on 8-10 speed for approximately 5-10 minutes for a smooth consistency. Add more sugar if not stiff enough.

This is one of my favorite cakes and it was fairly easy to make. I think this would be a great cake for a beginner.

You will need.....



Round silver 12 inch cake board

1 8 inch round cardboard cake board

Wooden Dowels

Jungle animals

Diego topper or toy

Jungle tree toppers or toys

1 10 inch round cake

1 8 inch round cake

Light brown buttercream icing for covering cakes

Dark green, blue, and gray buttercream icing for piping

Wilton tips 3 (2 of them), 5, 20 or 21 (star tip), 233 (grass and hair tip), and 67 (leaf tip)







**Decorators Tip** Use couplers when piping on this cake. A coupler will allow you to change tips without changing piping bags.


Directions:


Step 1:

Level, tort, and fill cakes. Next, place the 10 inch cake along the back edge of the silver cake board and cover with light brown buttercream icing. Then, place the 8 inch cake on the cardboard cake board and cover with light brown buttercream icing but do not place on top of 10 inch cake yet.

Step 2:

Place 4 wooden dowels towards the back center of the 10 inch cake. You will need to stick the dowels in to measure, then take them out and cut to size. Once cut put them back into the cake. These will help support the top tier. **Place the dowels in a small circle, leaving a space in the center for the final dowel. **

Step 3:



Place the 8 inch cake on top of the 10 inch cake and dowels. As mentioned above, put the top tier towards the back of the cake so we are able to add the waterfall later.

Step 4:

With a toothpick, outline the shape of the waterfall and lake at the top. Once you are happy with the outline, pipe blue buttercream icing onto the cake with tip number 3 (make sure to use a coupler). To make the icing look like flowing water, take your spatula and make the icing uneven. Now change to the star tip and pipe the splashing water at the bottom of each tier.

Step 5:

Using your other tip 3 and a coupler, pipe green vines on the side of the cake. Then, change to your leaf tip and pipe leaves on the vines. Switch again to your grass tip and pipe grass around the edge of each cake and around the lake and waterfall.

Step 6:

With the gray buttercream icing and tip 5, pipe rocks around the lake and waterfall. Finally place the animals, Diego, and trees on the cake.

Here is a great tutorial by shopcountrykitchen.com on covering a cake with fondant. To color the fondant, simply put coloring paste onto the fondant right before the kneading process. It is important to need the fondant until it becomes stretchy so that it doesn't crack when you try to put it on the cake.

For those of you who have never heard of if, ganache is a chocolate glaze icing. It can be used to cover cakes, thickened to fill truffles, or whipped to fill cakes. Once ganache cools, it become a hard coating on your cake.


Before covering a cake with ganache, take a wire cooling rack and place it in, or on top of, a cookie sheet. This will catch all of the chocolate that drips down. Make sure your cake is as level and smooth as you can get it as ganache can pick up imperfections in the cake.


Ingredients:
2 cups of heavy whipping cream
1 1/4 lbs of bittersweet chocolate


Directions:

1. Chop the chocolate into small pieces (or use small chocolate chips) and place them into a large stainless steel bowl.

2. In a large sauce pan, heat the cream over medium heat. Be sure to stir frequently until it starts to boil. Watch the cream closely as it will want to boil over. Once heated, pour the cream over the chopped chocolate.

3. Stir until the chocolate is completely melted and looks smooth.

4. Cool completely on the kitchen counter before use. Ganache can be stored in the refrigerator but will need to be reheated. To reheat, use a stainless steel bowl over hot, but not boiling, water.

5. Once cooled, place the cake on your wire rack and pour the ganache on top. With a spatula, lightly guide the chocolate down the sides of the cake. Keep doing this until the cake is completely covered with ganache.

10 inch Round Cake Pan

12 Wilton Mini Doll Picks

Two 14 inch Silver Cake Boards

Large Star Tip












Directions:


Step 1

Bake 2 10 inch round cakes and 12 mini wonder mold doll cakes. Then, level, tort, and fill the 10 inch cake.



Step 2

Cover the 10 inch cake with ganache icing. Once the cake is covered in ganache, place the cake on one of the silver cake boards and pipe boarder around the bottom of the cake using a large star tip. I placed the cake off center to leave room in front for some of the Barbies.



*Decorator's Tip* To create a two-color boarder, put both of your colors in the bag side by side. When you pipe, the icing will appear stripped.



Step 3

Decorate the cone shaped cakes to look like dresses. This can be done anyway you wish so I will not give step-by-step directions.



Step 4

Place mini doll picks into the top of each dome cake and place cakes randomly on the board.



Step 5
For extra decoration I made royal icing flowers ahead of time and placed them around the cakes.

For those of you who are not familiar with it, royal icing is an icing that, when dry, becomes hard. It is especially great for flowers but I have used it to make small plaques that can be placed anywhere on a cake.
An important thing to note about royal icing is that until it is hard, it cannot touch oils in anyway. When it touches oil in it's icing form it will break down and become very runny. It is best to use glass measuring cups, metal spatulas, metal mixing bowls and attachments, and disposable piping bags. Reusable, plastic, piping bags and plastic baking utensils hold onto oils after they are washed so it is best to steer clear of them.
With that being said, royal icing is a great medium to work with and can make wonderful embellishments for your cake.


Wilton's Recipe for Royal Icing Yield: 3 cups
Ingredients:
3 level tablespoons Wilton Meringue Powder
1 lb confectioners' sugar
5-6 tablespoons lukewarm water.




Directions:
Place confectioners' sugar and Meringue Powder in a bowl. Stir or mix at low speed until blended. Add water and mix 7-10 minutes at low-medium speed until icing loses its sheen. To prevent drying, be sure to cover the bowl with a damp cloth while working with icing.
Store in an airtight glass or metal container for up to 2 weeks. To reuse, beat on low speed to restore original texture.

*Decorator's Tip* During the video I noticed that her cake slides around a lot when she is trying to fill it. I like to use skid proof cabinet liners under my cake. This will keep the cake from sliding around and they are also great to use when delivering a cake.

Also, if you are like me and have a hard time keeping a knife straight when leveling a cake, here is a great product.
